Monday- Whole wheat Spaghetti
Tuesday- Salmon and scallops with mixed veggies
Wednesday- Zuccini manicotti with steamed veggies
Thursday- Left over manicotti with green beans
Friday- Eating out
Saturday- Homemade whole wheat pizza. Lot's of veggies....mmmm!
Sunday- Chicken fajitas with grilled peppers and onions

Menu plan....Tuesday?

Yes, I know it's Tuesday, but as I stayed home sick yesterday, today is my Monday. Thankfully, my Chicken Spinach Manicotti last week lasted 3 nights (whoo!) so I need to do less thinking.
Tuesday- Chicken Sandwiches with green beans.
Wednesday- Lemon Zested Talapia (yes, we're going on week three with this on the menu. Maybe this week is the week?) with Cous Cous and veggies.
Thursday- Mexican Chicken with mixed mexican veggies.
Friday- Dinner at Maggianos!
Saturday- Chili
Sunday- Left over chili with grilled cheese sandwiches.
On a side note, the inauguration is today. Is it wrong that I don't want to watch one single second of this man being sworn in as our President? I don't really care if it's wrong to be honest. Don't get me wrong, I think it's cool that we have elected a black man as President. I'm just disgusted that we elected THAT black man. Yes indeed, I am going to go ahead and NOT watch. Although, there is one thing I wouldn't have minded seing. I heard he completely screwed up his oath. Oh well, I'm sure it's on YouTube.

Prayer requests

I have been thinking about and praying for Carson for over a year now and wanted to send out the link to his site in order to have even more prayers sent up to our Heavenly Father in Carson's name. This little boy reminds me SO much of my cousin Cole when he was battling cancer and I have just fallen in love with him :o) Carson and his family have been through so much and they have to have a cure for Carson soon!

I just recently discovered this little girl through another blog I follow called Bring the Rain (on a side note, if you ever have the free time to read through Bring the Rain...WOW, Angie Smith is amazing.; such a strong Christian and inspiring woman! And her family is pretty great as well!)
Anyway, Angie's friends just welcomed a little girl named Harper into the world yesterday and she is not doing well. I ask for prayers for the healing of baby Harper. I can not imagine having the joy of welcoming your child into the world turn so heart wrenching.

I know prayer is not a cure all/heal all and that prayers won't always bring us what we want. I also know that God does hear all our prayers even if they aren't his will.

My husband rocks Fridays!

Chris rocks this Friday for showing me support, understanding, and love while I struggle greatly with what to do about my job situation. Everything is up in the air and my heart and mind are in such turmoil as to what to do about this stressful and terrible situation. He tells me to do what makes me happy and everything else will fall into place. If only I could believe that. Thanks though babe :o)

Blah, Monday again

Well,the only good thing about cooking this week is that 2 of last weeks recipes I didn't end up using thanks to a last minute girls night out and a steak dinner at the mother in laws. Yeah for less thinking on my part!
Monday- Turkey burgers, edamame, green beans
Tuesday- Lemon Zested Talapia with cous cous and mixed veggies
Wednesday- Chicken Spinach Manicotti with steamed veggies
Thursday- Chicken tacos with edamame
Friday- Dinner out with Chris's family
Saturday- Chili (there are 4 different veggies in my chili which is how I justify not making veggies for a side :o)
Sunday- Left over chili and grilled cheese sandwiches.

My husband rocks Fridays!

I am giving 2 reasons this week since somehow last Friday's slipped by me, and I never wrote anything. So here we go:
First and foremost by husband rocks this Friday for being such a good daddy to Mylie. It makes my heart smile when she jumps into bed in the morning and they both just grin from ear to ear. Yes, Mylie is a Mama's girl....no question about that....but she looks at Chris like he is the greatest thing since peanut butter filled bones, and that's saying something! He is not always patient, but he is so good to her and he loves her so much. In fact I have had to remind him to greet ME before her when he gets home, lol. I can't blame him, she is way cuter than me!
The second reason he rocks is because he left work early yesterday to run by Barnes and Noble to find me "Living Dead in Dallas" by Charlaine Harris, the second in the book series I am reading. I have looked and looked and could not find it! He knew he would be out late last night for work, and I would need something to read in bed with Mylie, so he went and found it for me! How nice!

2009 Fiesta Bowl CHAMPS!!!

Well folks, the Longhorns pulled it off! Yet another bowl win, ending the season with a 12-1 season. The game was, as the 24-21 score should indicate, a NAIL BITTER (literally, I chewed them all off and I NEVER bit my nails) until the very end. Watch the end for yourself:


Wow. Yep, if any of you heard some random yelling and screaming coming from the Cinco Ranch area late Monday night...that was probably Chris and I cheering the victory of our Horns!

HOOK EM HORNS! Here's to a great season!

PS- Tune in Thursday night for the BCS National Championship to watch Florida KILL the team that robbed UT of playing in said game even though we BEAT them head to head, aka Ou! Go Gators, Go Tebow!

Apparently, I have not blogged in a week

Monday- Broccoli Cheddar Chicken with brown rice and green beans
Tuesday- Honey Pecan Crusted Salmon with edamame and cous cous
Wednesday- Lemon Zested Talapia with cous cous and steamed veggies(It's new recipe, I'm a little nervous)
Thursday- Chris has a client "happy hour" which mean drinks, dinner, and more drinks. He will be home after midnight, soooo I'll probably have cottage cheese or cereal or something.
Friday- Eat out at Pappadeaux...MMMMM!
Saturday- Chicken Spinach Manicotti with steamed veggies
Sunday- BBQ Chicken Sandwiches with mixed veggies
